Blue corn popcorn and the new products with exotic colors

Have you ever heard of blue corn? It is more nutritious than ordinary yellow corn and is the raw material for new exotic color products. Learn more here at Eat Innovation!

Did you know that there are different types of corn? In Brazil there is little variety, unfortunately, but in other countries it is possible to taste different colors and flavors like blue, white, red and multicolored corn.

Blue corn, also called Midnight Blue, is dark, almost black. It has small, firm grains. It has anthocyanin and other antioxidants, fibers and polyunsaturated fatty acids. It can be found more often in Mexico and the US, but there are some small producers dispersed in other countries.

It gives rise to very beautiful blue products. The popcorn made with it, however, is not blue, but almost white, like popcorn made from yellow corn. A smaller and sweeter popcorn, the difference is the peel (the one part that sticks to the tooth), which remains dark.

Open Road Snacks produces blue corn popcorn, a product intended to be a healthier snack than the regular popcorn (for sale here), made with sea salt and without preservatives.

Besides the popcorn there are also corn chips (the ones are blue) …

…Mexican tacos…

…edible spoon (do you remember we show edible cutlery here and here? Look at the trend becoming mainstream and bringing together the healthy trend with sustainability!)

Foodie Spoon: a startup that produces edible cutlery of various flavors. Innovation we love here on the blog!

There is even a cosmetic made with him:

These blue foods would match perfectly the now-famous blue wine (we’ve talked here and here). Have you tried any of these products?
